My name is Eyal. I’m a retired teacher and dairy farmer. One day I decided to follow my passion and to learn to make cheese professionally.
After many months of research, studies, tours and workshops, in Israel and abroad, I began making fantastic cheeses!
All of my cheeses are produced in Moshav Kidmat Zvi in the Golan Heights. One of the buildings next to the cow shed was converted into a professional cheese factory, with the milk coming fresh from the cows.
I produce my own version of classic world cheeses:
Hard cheeses: Tomme, Havarti, Cheddar, Manchego, Gouda, and Taleggio
Soft-ripened cheeses: Camembert, Brie, Sainte Maure, Bossa, and Reblochon
Fresh cheeses: Circassian, natural or flavored with pepper and za’atar
